Charred broccolini pressed hard into a hot pan until it gets that smoky, almost meaty edge. Pink peppercorn warmth, lemony brightness, and thyme riding shotgun in olive oil, finished with sharp Parmesan and fresh lemon zest. It’s the kind of side dish that eats like a main when no one’s looking.

Ingredients
- 1 bundle of broccolini

1 tbsp Spiceology’s Pink Peppercorn Lemon Thyme seasoning
- Olive oil, as needed
- Salt, as needed
- Lemon zest, for garnish
- Parmesan, for garnish
Directions
Heat a large sauté pan to medium high heat.
Season your broccolini with olive oil, toss them around and season with your Pink Peppercorn lemon thyme seasoning and a sprinkle of salt.
Add a glug of olive oil to your pan and place your broccolini in the pan, if you have steak weights or a smaller pan to put on top to keep constant pressure to char evenly. Cook on each side for 2-3 mins or until desired charring.
Finish your broccolini with lemon zest, Parmesan and another sprinkle of PPLT seasoning for a quick, easy and elevated side dish.

Don’t baby the broccolini. Hard contact is everything here—use a weight or press it down so the stalks actually sear instead of steam. You’re chasing that borderline bitter, smoky char because it makes the lemon pop brighter and the pink peppercorn feel warmer and rounder. Finish with Parmesan while it’s hot so it melts just enough to cling, not disappear.
