Ingredients

1 box Favorite Pasta (we used cavatappi)

1 1/2 cup Mayo

1 1/2 cup Hard Salami (thinly sliced into strips)

1 cup Pepperoni (thinly sliced)

4 tsp Spiceology Pizza+ seasoning
-
1 1/2 cup Cherry Tomatoes (sliced)

1 cup Italian Flat-leaf Parsley (rough chopped)
-
1/4 cup Red Wine Vinegar
-
1 Tbsp Sugar
-
1/4 cup Shaved Parmesan
Directions
In a medium stock pot, fill with cold water and generously salt it. Bring to a boil and cook pasta to al dente according to the directions. Remove from heat and shock with cold water to stop it from overcooking.
In a large sauté skillet, sauté sliced pepperoni and salami strips over medium-high heat.
Sauté until salami and pepperoni start to crisp up, approximately 5-8 minutes.
Remove from heat and transfer to a paper towel lined plate to absorb extra fat and oil extruding from the cured meats.
In a large mixing bowl, combine mayo, red wine vinegar, sugar, and Spiceology Pizza+ seasoning. Whisk to blend well.
Add cooled and cooked pasta and fold in to the dressing.
Add half the tomatoes, crispy salami and pepperoni, and fold together.
Let pasta salad rest for 10 minutes. When ready to serve, garnish with parsley, remaining tomatoes, cured meats, and shaved parmesan.
