A quick pickled shallot recipe that harnesses the garlicky, sweet, roasted pepper notes of prime rib rub. A Condiment worth keeping.

Ingredients

½ tbsp Spiceology Prime Rib Rub

2 cups Shallots (sliced thin)

1.5 cups Rice Vinegar

1 Mason Jar (pint sized)
Directions
Combine all ingredients into mason jar. Shake vigourously. Place in fridge and let rest for 12-24 hours.
Recipe Note
Ahem. The longer it sits...the better it gets. You can use thinly sliced red onion or even yellow onions for this recipe. The world is your pickle.
