Pumpkin Spice White Chocolate Shortbread Cookies

Ingredients

  • 1 cup butter

  • 1/2 cup brown sugar

  • 1 tsp vanilla extract

  • 1 tsp salt

  • 2 1/4 cup All Purpose flour

  • 2 Tbsp Spiceology Pumpkin Spice blend

  • 8 oz white chocolate chips

  • 1/2 tsp oil

Directions

  1. Set oven to 300 degrees F.

  2. In a large bowl, cream butter and sugar until light and fluffy.

  3. Gradually stir in, vanilla, salt and flour and mix well.

  4. Turn onto a lightly floured surface and knead until smooth, about 3 minutes. - Pat into a 1/3-in.-thick rectangle measuring 11 in. x 8 in.

  5. Cut into desired shape.

  6. Bake at 300° for 25 minutes or until bottoms are lightly browned.

  7. Cool for 5 minutes before removing from pan to a wire rack.

  8. Melt white chocolate and dip cookies - tip: add some oil to make the chocolate more dippable.

  9. Let chocolate dry and enjoy!
