Smoky Honey Habanero BBQ Chicken Thighs with Peach Slaw

Ingredients

1 lb boneless skinless chicken thighs

1 Tbsp olive oil

1½ tsp apple cider vinegar

1 Tbsp Spiceology Smoky Honey Habanero

1 Tbsp honey

1½ tsp lime juice

2 cups shredded cabbage mix

1 peach, grilled and diced

2 Tbsp mayo
-
1½ tsp apple cider vinegar

1½ tsp honey
-
1½ tsp lime juice

½ tsp Spiceology Smoky Honey Habanero

1 Tbsp chopped cilantro
Directions
In a medium bowl, toss chicken thighs with olive oil, apple cider vinegar, and Smoky Honey Habanero until evenly coated. Let marinate for 20 minutes while the grill heats.
In a small bowl, whisk together BBQ sauce, honey, and lime juice until smooth. Set aside for grilling.
Heat grill to medium-high heat. Lightly oil grates to prevent sticking.
Place chicken thighs directly onto the grill and cook for 5–7 minutes per side, flipping once, until deeply caramelized and cooked through.
During the final 2–3 minutes of cooking, brush generously with the Smoky Honey Habanero BBQ glaze, allowing it to lacquer and lightly char onto the chicken.
In a large bowl, combine shredded cabbage, grilled peach, mayo, apple cider vinegar, honey, lime juice, Smoky Honey Habanero, and cilantro.
Toss until evenly coated. Pile charred chicken thighs onto a platter and serve alongside the peach slaw.

Brush the glaze on during the final few minutes only. Earlier than that and the sugars can scorch before the chicken finishes cooking.
A little bitterness from deep grill marks balances the sweetness of the honey and peach. Don’t be shy with the fire.
Give the chicken 3–5 minutes off heat before slicing. Keeps the juices where they belong instead of running all over the cutting board like a crime scene.
