Smoky Honey Habanero Wild Rice & Mushroom Soup

Ingredients

  • 3 Tbsp Spiceology Smoky Honey Habanero (now at Target!)

  • 3 Tbsp Graza Sizzle (available at Target!)

  • 2 tsp Graza Drizzle (available at Target!)

  • 3 cups Baby Bella Mushrooms (sliced)

  • 2 cups Carrots (small dice)

  • 1 cup White onion (small dice)

  • 1/2 cup Fresh Jalapeno (small dice)

  • 6 Garlic Cloves (minced)

  • 4 cups Fresh Spinach

  • 2 1/2 cup Wild Rice (no seasoning packet)

  • 2 quarts Vegetable Stock

  • 1/2 cup Heavy Cream

  • 2 Tbsp Soy Sauce

  • Juice of 1 Lime

  • 1/2 cup Cilantro (fine chop with stems)

  • 8 Limes wedges

Directions

  1. In a medium saucepan, combine the wild rice and 4 cups of vegetable stock. Bring to a boil, then reduce to a simmer. Cover and cook for about 40-45 minutes, or until the rice is tender and most of the liquid is absorbed. Drain any excess liquid and set aside.

  2. While the rice is cooking, heat a large pot or Dutch oven over medium heat. Add a splash of Graza Sizzle. Once hot, add the diced onions and cook until they start to soften, about 3-4 minutes.

  3. Add the diced carrots and continue to sauté for another 4-5 minutes, or until they begin to soften.

  4. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 6-7 minutes.

  5. Add the diced jalapenos and minced garlic. Sauté for an additional 2-3 minutes, until fragrant.

  6. Stir in the cooked wild rice, soy sauce, and the remaining vegetable stock. Bring the mixture to a gentle boil, then reduce to a simmer.

  7. Add the 2 tablespoons of Spiceology Smoky Honey Habanero seasoning, lime juice, and salt and pepper to taste. Simmer for 15-20 minutes to allow the flavors to meld.

  8. Stir in the chopped spinach and cook for another 2-3 minutes, just until the spinach wilts.

  9. Reduce heat to low and stir in the heavy cream. Simmer for an additional 2-3 minutes to warm through. Adjust seasoning with more salt, pepper, or Spiceology Smoky Honey Habanero as needed.
