Brussels sprouts, kale, baby spinach - this veggie-packed shakshuka is a delicious way to get your daily greens. With warming spices from our Tandoori Glory this dish is equally tasty for a brunch or dinner.

Ingredients

1/2 pound Brussels sprouts
-
3-4 stalks of kale
-
1 handful of baby spinach

3-4 eggs
-
1/2 yellow onion
-
4 cloves of garlic
-
3 Tbsp Spiceology Tandoori Glory
-
1/4 cup feta
-
1 avocado
-
Fresh cilantro, for garnish
-
Radish, for garnish
-
Salt and pepper, as needed

Olive oil, as needed
Directions
Thinly slice your Brussels sprouts, kale and spinach. Dice your onion to a medium small dice, and thinly slice your garlic.
Over medium-high heat sauté your garlic and onion for 3-4 minutes.
Add your Brussels sprouts and kale. Mix in Spiceology Tandoori Glory and season with salt and pepper. Cook for 5-6 minutes then add in your spinach. Cook for another 2 minutes.
Make 3-4 indents in your mixture and add in your eggs, cover and cook for 3-5 minutes, check your eggs periodically to make sure they don’t over cook.
Top your shakshuka with feta, cilantro, radishes, avocado, and olive oil and enjoy this great veggie-packed breakfast/brunch.
