Truffle Parmesan Lobster Pasta

Ingredients

  • 6 oz tagliatelle

  • 2 oz lobster meat, chopped

  • 1 tablespoon butter

  • 1 tablespoon olive oil

  • 2 garlic cloves, minced

  • ½ cup white wine or chicken stock

  • ½ cup heavy cream

  • 2 tablespoons Spiceology Truffle Parmesan Blend

  • ½ cup parmesan cheese, grated

  • 1 tablespoon lemon juice

  • Lemon zest from ½ a lemon

  • Chives for garnish

  • Micro greens for garnish

Directions

  1. Cook pasta until al dente; reserve ¼ cup pasta water.

  2. Heat butter and olive oil in sauté pan.

  3. Add minced shallot and garlic; cook until translucent.

  4. Deglaze with white wine or champagne; reduce by half.

  5. Stir in heavy cream and Truffle Parmesan blend.

  6. Simmer 2–3 minutes until slightly thickened.

  7. Fold in grated parmesan, lemon juice, and lemon zest.

  8. Add chopped lobster meat and warm gently without boiling.

  9. Toss pasta with sauce; adjust thickness using reserved pasta water.

  10. Season with salt, pepper, and fold in chopped chives.

  11. Plate pasta in nests on center of plates.

  12. Top with warm lobster pieces.

  13. Garnish with shaved truffle, micro herbs, or chive blossoms.
