What Is Urfa Biber?
Urfa Biber comes from the sun dried, Urfa Pepper. This Pepper is native to Turkey, where they have used it for generations.
The Urfa pepper is dried in the sun but then covered periodically at night to allow the peppers to sweat and maintain some of its oils. Once ground, the pepper has a smoky, sweet and sour profile. The coarse and irregular size of the cut also adds a great textural experience when eating.
How Urfa Biber Can Be Used
Urfa Biber comes from the region of Urfa in Turkey, “Biber” meaning pepper in Turkish.
Cooks from this region are known for using this pepper in highly seasoned kabobs and other forcemeats. The pepper delivers spice and also a smoky/sour finish that offers a unique and appealing flavor. Urfa Biber can be mixed into hummus, sprinkled over roasted veg such as eggplant and even mixed into yogurt dressings.
There are notes of chocolate in this pepper and it cannot be overstated the deep earthy and smoky flavor it can provide. Its ability to add not only acidity but heat is a main driver on why so many chefs have come to use it.
Spiceology adds a small amount of salt to it’s blend to further draw out the full taste of the Urfa Biber.
The Flavor Urfa Biber
If you tasted this pepper you would believe it was smoked using wood, but you’d be mistaken. It’s the sun-drying and sweating that offer this phenomenal flavor.
As the pepper dries, the water content diminishes and the flavor concentrates heavily. This is the reason the Urfa Biber is so sought after, this concentration of flavor.
