Buffalo Lemon Pepper Chicken Orzo Soup

Ingredients

Scale
  • 2 lbs Chicken Breasts
  • 3 cups Celery (thinly sliced)
  • 3 cups Carrots (thinly sliced)
  • 2 cups White Onion (small dice)
  • 1/8 cup Garlic Clove (thinly sliced)
  • 2 Tbsp Spiceology Buffalo Lemon Pepper available at Target
  • 2.5 quarts Chicken Stock
  • 1 lb bag uncooked Orzo
  • 1 Tbsp kosher salt
  • Freshly squeezed lemon juice from 2 lemons
  • 1 Tbsp Extra Virgin Olive Oil
  • 1 1/2 cups Italian Flat Leaf Parsley (rough chop)

Instructions

  1. In a large stock pot, heat olive oil to a shimmer. Add garlic and sauté for two minutes before adding the remaining vegetables. Sautee for 3-5 minutes until they gain color and become fragrant.
  2. Stir in Spiceology Buffalo Lemon Pepper blend.
  3. Add 1 quart of chicken stock and bring to a boil.
  4. Once boiling, add raw chicken breasts. Reduce heat to medium low and cook for 15 minutes.
  5. Remove chicken from the pot and shred. Return to the pot and return to a boil. Add remaining stock and salt.
  6. In a separate pot, cook orzo to al dente per the directions on the box. Strain, shock with ice water, and add to the soup pot.
  7. Squeeze lemons into the soup while simmering and add fresh chopped parsley.
  8. Reduce heat to a simmer for 5 more minutes then turn off heat.
  9. Serve with parsley and more Buffalo Lemon Pepper for garnish.
