Ingredients
-
1 pint of fresh Blackberries
-
2 eggs
-
1/2 cup of milk
-
1/2 cup AP flour
-
2 Tbsp butter
-
Pinch of Salt
-
2 Tbsp Spiceology Blackberry Balsamic, divided
-
Lemon zest, as needed
-
4 oz of Mascarpone
-
1/2 cup cold heavy cream
-
1-2 Tbsp maple syrup
-
1/2 tsp vanilla paste or extract
Directions
Preheat your oven to 450°F and place your cast iron or cast aluminum pan in the oven to get hot.
For the Dutch baby, mix your eggs, flour, milk and salt together, careful not to over mix.
Slice your blackberries in half and mix together with 1 Tbsp of Blackberry Balsamic seasoning.
For the Lemon mascarpone, in the bowl of a stand mixer, add your mascarpone, cream, vanilla, maple syrup, a pinch of salt and some lemon zest. Mix on medium high for 2-3 minutes or until soft peaks form.
When your oven and pan are hot, remove the pan and add in your butter, making sure to swirl the butter up the sides of the pan. Pour in your batter and put directly back into the oven for 12-14 minutes.
Remove the Dutch Baby and let cool slightly before adding your mascarpone, blackberries and more lemon zest. Sprinkle with icing sugar or granulated honey for this beautiful breakfast/brunch!
