Ingredients

2 chicken breasts

1-2 tsp of Spiceology Tomatador seasoning, per chicken breast

1/2 cup all-purpose flour

2 eggs

1/2 cup seasoned bread crumbs

Oil for frying

1 14 oz can of crushed tomatoes
-
1/2 small diced yellow onion
-
2-3 cloves of garlic, roughly chopped

1 Tbsp Tomatador seasoning
-
1.5 Tbsp flat-leaf parsley, chopped

Mozzarella, as much needed to cover chicken

Olive oil, as needed

Salt, as needed

Directions
In a sauté pan, bring some olive oil to medium heat. Add in your onions and garlic, sauté for 2 minutes until garlic is fragrant, adding in your tomatoes, cooking on low for 10-15 minutes. Add in your parsley once your sauce has cooled a bit.
Heat your cooking oil to 350°F and turn your oven on to 350°F.
Butterfly your chicken breast, season with olive oil, salt and Tomatador seasoning.
Make a breading station. Dredge your chicken in seasoned four, then egg wash then your bread crumbs.
Shallow fry your chicken until golden brown on both sides, roughly 3-4 minutes per side.
Place your browned chicken onto a sheet pan, top with your tomato sauce then cheese and bake for 6-8 minutes. Turn your broil on and broil for 1-2 minutes, or until your cheese is melted and golden brown all over.
Serve with pasta, fries or a salad for a quick week night meal.
