- 6 slices thick-cut bacon
- 2 large russet potatoes, peeled and cut into 0.5-inch dice (about 1.5 lb)
- 1 Tbsp olive oil, if needed
- 1.5 Tbsp Spiceology Cowboy Campfire Seasoning
- ½ white onion, diced
- 1 jalapeño, thinly sliced (seeds removed for less heat)

Directions
Cook the bacon in a large cast-iron skillet over medium heat, turning once, until crisp, 8 to 10 minutes. Move it to a plate and leave the rendered fat in the pan. That fat is your cooking oil. If you have less than 2 Tbsp, add olive oil to make up the difference.
Add the diced potatoes in an even layer and season with 1 Tbsp Spiceology Cowboy Campfire Seasoning. Cook undisturbed for 5 minutes, until the bottoms are deeply browned.
Stir, cover the skillet, and cook 10 to 12 minutes, stirring every 3 to 4 minutes, until a fork slides into a potato cube with no resistance.
Uncover and add the onion and jalapeño. Cook, stirring occasionally, 5 to 7 minutes, until the onion turns translucent and the potato edges crisp back up. Season with the remaining 0.5 Tbsp Spiceology Cowboy Campfire Seasoning.
Push the potatoes to one side of the skillet and crack in the eggs. Fry 2 to 3 minutes for set whites and runny yolks, or 4 to 5 minutes for firm yolks.
Divide the potatoes among plates, add the bacon and a fried egg to each, and finish the eggs with a pinch of Spiceology Cowboy Campfire Seasoning.
