Cowboy Candy Fried Chicken Thigh

Ingredients

  • 1 quart frying oil

  • 1/2 cup Spiceology Cowboy Candy seasoning

  • 4 Chicken Thighs, Bone-In Skin-On

  • 2 Tbsp Salt

  • 2 Tbsp Extra Virgin Olive Oil

  • 2 cups Flour

  • 1 tsp Baking Powder

  • 1/4 cup Spiceology Cowboy Candy seasoning

  • 4 Eggs, Scrambled

Directions

  1. In a large mixing bowl, season the chicken thighs with the olive oil, salt and Spiceology Cowboy Candy. Mix well to run blend evenly across all four thighs.

  2. Marinade for a minimum 1 hour (12 hours preferred) - Heat frying oil to 350 degree F.

  3. With two medium size mixing bowls (1 with flour, Spiceology Cowboy Candy, baking powder from the dredge list, and the other with the raw scrambled eggs) dredge the chicken thighs in the flour mixture then into the egg and then back into the flour mixture.

  4. Set on a rack in a sheet tray and sit at room temp for 15 minutes.

  5. Doing 1-2 thighs at a time (pending room in your frying pot) lay the dredged thighs in the oil.

  6. Fry for 12 minutes turning the thighs every 2-3 minutes.

  7. Remove from oil and toss in a bowl with the Spiceology Cowboy Candy blend.

  8. Allow the oil to drain off the thigh and then serve.
