Smoked Maple Bourbon Bacon & Sausage BBQ Beans

- 3 cans Dark Red Kidney Beans (drained)
- 1 lb Bacon (chunked)
- 1 lb Smoked Sausage (thinly sliced)
- 1 1/2 cups White Onion (medium dice)
- 2 cups Cherry Tomatoes
- 2 Tbsp and 1 separate Tbsp Spiceology X Derek Wolf Maple Bourbon Blend
- 1 Tbsp Blackstrap Molasses
- 2 Tbsp Spicy Brown Mustard
- 1 cup Brown sugar
Instructions
- Preheat smoker to 250 degrees.
- In a large mixing bowl, combine bacon, sausage, and diced onion. Fold in 2 Tbsp of Spiceology Maple Bourbon blend.
- Add tomatoes to the bowl and gentle mix, taking care to not smash the tomatoes.
- Transfer mix to a large seasoned cast iron skillet.
- Smoke for 45 minutes stirring once.
- Add beans and remaining ingredients and stir to combine.
- Increase heat on the smoker to 425 degrees and finish cooking for the remaining 45 minutes, stirring occasionally.
- Remove from heat, serve at the cookout. You will be invited to the next cookout.
