Standing over a pan of hot oil may be the last thing you want to do, but these potato chips make it well worth it. They make an incredible side for a backyard BBQ meal, a wonderful picnic accompaniment, and an all-around amazing snack for really any occasion. They’re crunchy, spicy, cheesy perfection.
So without further ado, let’s heat up the frying pan and get to cooking!
Black & Bleu Potato Chips Recipe
Makes 4-6 Servings
Ingredients:
- 4 large russet potatoes, peeled & sliced thin with a mandoline or sharp knife
- 2 cups canola oil
- ¼ cup Spiceology Black Bleu Rub
Instructions:
- Heat the oil in a large pot to 375° F. Using a clip-on candy thermometer will make this easy. Make sure the potato slices are patted dry before adding to the hot oil. Working in small batches, add a handful of potatoes slices to the oil. Fry until they begin to turn brown, flipping or stirring as necessary. Remove to a paper towel-lined baking sheet. Repeat with remaining potatoes.
- In a large bowl or a paper bag, add the warm potato chips and Black & Bleu spice rub and stir or shake to coat. Serve immediately or place in a sealed bag for up to 2 days.
