- ½ large watermelon sliced into 1-2” slices, rind left on.
- ¼ cup Jean-Paul Bourgeois Game Changer Blend
- ¼ cup red wine vinegar
- 1 clove garlic
- ½ teaspoon salt
- 1 tablespoon sugar
- 1 tablespoon dijon mustard
- ¼ cup olive oil
- 2 cups feta, cubed
- ½ cup red onion, julienned thin
- 2 cups cherry tomatoes, halved
- 1 cup mint leaves
- Slice watermelon and season both sides with game changer blend well. Spray watermelon with PAM spray on both sides.
- Grill over high heat for 1-2 minutes per side. Remove from the grill.
- Cut rind off and cut watermelon into cubes. Set aside.
- Blend the vinegar, salt, sugar, garlic and dijon in a blender until pureed. Slowly drizzle olive oil in until emulsified.
- Toss dressing with watermelon and the remaining ingredients.
