Grilled Watermelon Feta Salad

GRILL WATERMELON SALAD & HIBISCUS HABANERO GIN COCKTAIL // FISH FOOD

Ingredients: 

  • ½ large watermelon sliced into 1-2” slices, rind left on.
  • ¼ cup Jean-Paul Bourgeois Game Changer Blend
  • ¼ cup red wine vinegar
  • 1 clove garlic
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 1 tablespoon dijon mustard
  • ¼ cup olive oil
  • 2 cups feta, cubed
  • ½ cup red onion, julienned thin
  • 2 cups cherry tomatoes, halved
  • 1 cup mint leaves

Instructions:

  1. Slice watermelon and season both sides with game changer blend well. Spray watermelon with PAM spray on both sides.
  2. Grill over high heat for 1-2 minutes per side. Remove from the grill.
  3. Cut rind off and cut watermelon into cubes. Set aside.
  4. Blend the vinegar, salt, sugar, garlic and dijon in a blender until pureed. Slowly drizzle olive oil in until emulsified.
  5. Toss dressing with watermelon and the remaining ingredients.
