Ingredients
Cast Iron Seared New York Strip Steaks
- 2 packs of Silver Fern Farms 100% Grass-fed New Zealand New York Strip Steaks (10 oz each)
- 1 teaspoon kosher salt
- 1 teaspoon coarse black pepper
- 1/2 teaspoon Spiceology Blackberry Balsamic spice blend
- 2 teaspoons olive oil
Boozy Balsamic Blackberries
- 1 tablespoon shallots
- 2 cups blackberries
- 2 tablespoons orange liqueur
- 2 tablespoons water
- 2 teaspoons Spiceology Blackberry Balsamic spice blend
- 2 tablespoons butter
- Pinch of salt and pepper
- 1 tablespoon fresh thyme, chopped
- 2 tablespoons blue cheese
Instructions
Seared New York Strip Steaks
- Season the steaks with salt, pepper and Blackberry Balsamic spice blend. Heat a cast-iron skillet over medium-high heat. Add 2 teaspoons olive oil to the skillet.
- Place the steaks in the pan. Sear for 3-4 minutes. Flip. Cook another 3-4 minutes until medium-rare. Turn the steaks on their sides and sear the edges for another minute per side.
- Remove the steaks and cover with foil to keep warm.
Boozy Balsamic Blackberries
- Add the shallots to the skillet and sauté for 30 seconds. Add the blackberries and liqueur. Carefully, light the liqueur with a lighter and flambé the berries, stirring until the flame subsides.
- Stir in water, Blackberry Balsamic spice blend and butter. Continue cooking, until the sauce has thickened. Season with salt and pepper to taste. Stir in fresh thyme.
- Slice the steaks and top with the boozy balsamic blackberries and blue cheese.
