Ingredients

16 oz Blue Crab Meat

2 Tbsp Spiceology Black Magic Blackening Blend (also available at Giant!)

1 lb box Spaghetti

8 cloves Garlic (thinly sliced or minced)

1/2 cup Romano Cheese (freshly grated)

2 tsp fish sauce
-
3 Tbsp oyster sauce
-
1 Tbsp soy sauce
-
1 cup Green Onion (thinly sliced)

5 Tbsp Butter
-
1/2 cup Shallot (minced)

3 cups Olive Oil
Directions
In a medium stock pot, bring 10 cups of water to a boil (salt generously). In a small mixing bowl, combine fish, soy, and oyster sauces with Spiceology Black Magic. Set aside.
In a small sauce pan, add the shallots and cover with 3 cups of olive oil and then turn on to medium high heat. Once shallots float to the surface and start to turn golden brown, strain from oil on a dry paper towel to drain. Set aside.
In a large sauté skillet, melt butter and sauté garlic for 2-3 minutes.
Add pasta to the boiling salted water and cook until just under al dente (typically 2 minutes less than what al dente says on the package). Reserve 2 cups of pasta water.
Add the crab meat to the skillet and let cook for 1 minute to heat. Add blended black magic sauce and cook over high heat for 2-3 minutes. Add pasta and fold in 1/2 cup of pasta water. Bring to a boil and continue to toss vigorously.
Add in freshly grated Romano cheese and rapidly fold and stir pasta to blend cheese in as it melts.
Add remaining pasta water and continue to toss pasta and fold to thicken the sauce. Add in 3/4 of the sliced green onion.
Remove from heat. Garnish with a dusting of Black Magic, fried shallots, and remaining green onion. Serve immediately.
