Don't feel like working the grill to roast corn for this easy salad? Simply cut the kernels off the cob and roast them in the oven to get a flavorful char. Our Black Magic Cajun Blackening blend adds amazing depth of flavor in just a tablespoon or two. With a little cayenne, slightly spicy and sweet paprika, and the perfect amount of garlic and herbs - keep this blend on your kitchen counter to add the perfect flavorful kick to whatever you're cooking.

Ingredients

8 Shucked ears of corn

1 Tbsp Spiceology Black Magic Cajun Blackening Blend

2 Tbsp vegetable oil

3/4 cup Mayo

2 tsp White Sugar
-
2 tsp Apple Cider Vinegar

1/8 cup Flat Parsley (finely chopped)
Directions
Preheat oven to 400°F.
Slice corn off the cob.
Toss corn in 2 Tbsp of Neutral oil.
Evenly spread corn on a baking sheet.
Roast corn at 400°F for 10 minutes, turning the sheet pan once and turning the corn two or three times.
Remove from the oven.
In a medium mixing bowl, combine 1 Tbsp of Black Magic, mayo, vinegar, and 2 tsp of sugar.
Once corn has cooled, fold corn into the mixing bowl with Spiceology Black Magic dressing.
Refrigerate until ready to serve. Garnish with finely chopped parsley.
