2 Tbsp Spiceology Buffalo Lemon Pepper blend

17 g Fresh Sage with stems

500 g Local Honey

420 g Water

1.75 oz New Riff Rye Whisky

0.75 oz Spiceology Buffalo Lemon Pepper Honey Sage Syrup

0.75 oz Freshly squeezed lemon juice

1 Ice rock

For the Cocktail
Directions
For the Buffalo Lemon Pepper Honey Sage Syrup
Pre-heat Sous-vide to 138 degrees.
Combine honey, Spiceology Buffalo Lemon Pepper, sage, and water in a freezer safe Ziploc bag.
Submerge in sous vide for 2.5 hours.
Remove from sous vide, jar and refrigerate.
For the Cocktail:
In a tumbler, combine New Riff Rye Whisky, Buffalo Lemon Pepper Honey Sage Syrup, and lemon juice.
Fill tumbler with ice.
Close and shake vigorously 12 times.
In a whisky rocks glass, add a large ice rock, cube or sphere.
Pour cocktail over rock.
Sip, savor, make another.
