Ingredients

1 Tbs olive oil

1 lbs 80/20 ground beef

1 yellow onion, small dice

1 green bell pepper, small dice
-
2 Tbs tomato paste
-
2 Tbs Spiceology x Derek Wolf Cowboy Butter

2 Tbs garlic, minced
-
14.5 oz can of Bianco DiNapoli fire roasted tomatoes

12 oz can black beans
-
1 cup long grain white rice
-
2 cups beef broth
-
1 tsps Worcestershire sauce
-
Shredded cheese (of your choice)

Parsley, chopped (for garnish)

Salt, to taste
Directions
Heat your large skillet over medium-high heat. Add olive oil and reduce heat to medium. Add your onions and green bell peppers and sweat.
Once the onions are translucent and green bell peppers are tender, add ground beef and increase heat to medium-high.
Once the ground beef is cooked, create a well in the center and add garlic, allowing to cook until fragrant. Stir to combine beef and garlic.
Create another well in the center and add tomato paste. Caramelize the paste and stir to combine with beef and garlic.
Add Spiceology x Derek Wolf Cowboy Butter and stir. Add salt to taste.
Stir in roasted tomatoes with juice and black beans. Add salt to taste.
Stir in rice and beef broth. Reduce heat to medium-low, bring to a simmer, cover and cook for 20 minutes. Make sure the mixture stays at a simmer.
While your mixture is simmering, preheat your oven to broil.
Once the rice has finished cooking, top your dish with your shredded cheese of choice and broil in the oven for about 5-6 minutes or until the cheese browns.
Remove from the oven and top with parsley. Enjoy.
