Ingredients

4 leftover baked potatoes

2-3 tbsp Spiceology X Derek Wolf Cowboy Butter seasoning

4-5 slices of cooked bacon
-
1 medium yellow onion, medium sized dice

2 tbsp butter
-
1 cup of your favorite cheese, shredded
-
Your favorite BBQ sauce, as needed
-
Ranch, as needed
-
Olive oil, as needed
-
Optional, 2 thinly sliced Serrano chiles

Optional, 1 tbsp parsley for garnish
Directions
Cut your potatoes in half, scooping out some of the inside potatoes but keeping some, cut in half again.
Toss all your potatoes skins together in a bowl with olive oil and 1-2 tbsp Spiceology Cowboy Butter seasoning. Bake for 6-8 minutes at 425°F to crisp up.
Warm up a sauté pan and add your butter and onions and 1 tbsp Spiceology Cowboy Butter, cook them until lightly sautéed, about 15 minutes.
Chop your bacon and thinly slice your Serrano chilis if using them.
Once your potatoes are out of the oven, top with cheese, sautéed onions, bacon, and chilis, bake again for 5 minutes or until cheese is melted.
Finish your potato skins with BBQ sauce and ranch and enjoy this great appetizer!
