Ingredients

¼ cup Chad White's Flavor Hog Blend
- 1 pound bacon, diced

½ yellow onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced

¼ cup brown sugar
- 1 cup apple cider vinegar

salt, to taste

½ cup mustard seeds
- ½ cup beer, light
- 1 cup apple cider vinegar
- ¼ cup honey
- 1 tablespoon salt

Directions
Bacon Jam:
- Dice and render bacon in a sauce pot over medium heat until fat is liquid and bacon is crispy, about 5-10 minutes
- Strain bacon and return some fat to the pot
- Add onions into the pot and cook until translucent, about 5 minutes
- Add garlic and ginger and cook for 1 more minute stirring frequently
- Add remaining ingredients and bring to a simmer
- Cook until reduced to a lightly thick consistency
- The jam will thicken when it cools.
Beer Mustard:
Place all ingredients in a pot and bring to a simmer.
Cook until reduced and mustard seeds are expanded.
Cool and store for use
