A spicy, fresh, zesty, middle eastern condiment given the Greek Freak treatment. The combination of Greek Freak infused with Olive Oil, fresh jalapenos, crisp cilantro, and citrus is a condiment worth keeping in your fridge.

Ingredients

2 tbsp Greek Freak

½ cup Olive Oil

2 ½ cups Cilantro (rough chopped with stems)

8 Jalapeños (seeded and rough chopped)

8-10 Whole Garlic Cloves

1/8 cup Fresh squeezed lemon juice

1 tsp Kosher salt
Directions
In a food processor or vita-mix, combine garlic, jalapeños, greek freak and salt.
Blend into a paste. Add cilantro to the food processor and pulse for 1-2 minutes.
On low, slowly add Greek Freak and olive oil.
Stop blending and transfer to mason jars. Seal and store in the fridge for up to one week. I mean, eat it all first. Make more. Then store that.

The absolute UNIT of a green condiment, Zhoug is a demonstrably-delicious, dynamic, dish worthy sauce that get spicier if you have the jalapeño seeds incorporated. I would let it rest after blending for at least an hour. If you want a deeper emerald and even grassier and fresh version, incorporate 1 cup of flat leaf parsley. Nothing but yum.
