Ingredients
- 2-3 pounds boneless skinless chicken thighs
- 2 cups white rice, of choice
- 2 cups soy sauce (or tamari to keep gluten-free)
- 1 cup granulated sugar
- 1 cup pineapple juice
- ¼ cup rice wine vinegar

¼ cup Spiceology Maui Wowee Hawaiian Rub

cornstarch slurry -1 tablespoon cornstarch: 1 tablespoon water
- 1 pound tubular pasta, of choice
- 2 cup mayonnaise
- ¼ cup pineapple juice
- ¼ cup Rice Wine Vinegar
- ¼ cup granulated sugar

¼ cup Spiceology Maui Wowee Hawaiian Rub
- 1 bunch green onion, ¼ in. cut
- 1 cup shredded carrots
- ½ red bell pepper, medium diced
- 1 Jar pickled peppers (destem and keep liquid)
- ⅔ cup chili paste
- 1 Stick unsalted butter, melted

¼ cup Spiceology Maui Wowee Hawaiian Rub

1 tablespoon Spiceology Smoky Honey Habanero Sweet Spicy Rub
- 1 can Spam, sliced
- 1 Pack Nori sheets
- cooked rice
- ¼ of base sauce
- Water
Base Sauce (for chicken, sauce and spam)

Directions
Base Sauce
Combine all ingredients, whisk until sugar is dissolved.
Separate into three bowls, ½ of sauce (1.6 C or 13 fl. oz) into one bowl 1/4 Split the remaining sauce into 2 bowls (.8 C or 6.5 fl oz).
Add your chicken to the large bowl (13 fl oz). Marinate at least an hour, overnight is preferred.
Cook chicken thoroughly on the grill (165°F).
Slice/chop when ready to serve.
White Rice
Cook rice as directed (equal parts rice and water) either in a rice cooker or in a saucepan by bringing rice and water to a boil. If using a saucepan, cover and cook on low for 30 minutes.
Spam Musubi
Save SPAM can after removing SPAM.
Cut SPAM into ¼ inch slices or smaller depending on preference.
Add to small bowl of marinade and marinate for 1 hour.
Cut Nori Sheet into preferred size. Using the vertical stripes on the sheets We recommend 2.5. Using fingers or a brush, lightly brush the surface of cut nori sheets with water on both sides.
Turn griddle or pan to medium heat, season with 2 tablespoons of oil.
Sear SPAM for 3.5 to 4 minutes each side. Set aside on paper towel to remove excess oil.
Using the empty SPAM can, press cooked rice into the bottom of the container to form a rice block. Remove from the can and layer the cooked SPAM onto the rice. Next, wrap the Nori around the SPAM and rice block. Make sure to keep it tight using enough strain on the Nori wrap when rolling.
Hot Sauce
Melt the butter in a saucepan.
Combine all ingredients into a blender, except the butter.
Once blended, slowly pour in the melted butter.
*If the butter clumps, heat the ingredients in a pan or microwave just until the butter re-melts and blend it all again.
Mac Salad
Cook pasta according to the package directions. Once done, cool by running under cold water, this will also stop the cooking process. Can be done the night prior.
For the dressing, whisk all ingredients in a medium/large bowl.
Once combined and smooth, add the pasta to the dressing.
Refrigerate and let sit for at least an hour, overnight would be best.
To Make Finishing Sauce
Heat the remaining “Base Sauce” in a small saucepan. Stir in a cornstarch slurry, bring it all to a boil to cook out the starch. Sauce will thicken.
To plate family-style
On a large platter, place remaining rice on half, grilled sliced chicken over rice, drizzle with finishing sauce, place spam musubi next to the chicken and mac salad next to that. Serve the hot sauce in a squeeze bottle.
