Jamaican Jerk Shepard's Pie

Ingredients

2lbs Ground Chuck

1.5 tbsp Jamaican Jerk

2 tbsp Smoky Honey Habanero

2 cups White Onion (small dice)

¼ cup Garlic (minced)

2 cups peas (fresh or frozen)

2 cups Beef Stock

1/8 cup Habanero Pepper (seeded and minced)

2 cups Celery (small dice)

2 tsp Worcestershire

1 tbsp Soy Sauce

6 cups Sweet Potatoes (chunked)

½ cup Brown Sugar
-
1 can Coconut Milk
-
1 tbsp Curry Madras

1 tbsp Kosher Salt

2 tbsp sliced into for pads Cold Butter
Directions
Preheat oven to 400°F. In a large Dutch oven or double-handled skillet, brown ground beef with 1 tbsp of Jamaican Jerk and strain fat off.
Remove from the skillet and sauté garlic, onions, and habanero pepper for 2-3 minutes.
Add celery and cook for another 5 minutes. Add ground beef back to the skillet. Add peas. soy sauce, another tbsp of Jamaican Jerk, and Worcestershire.
Cook over medium high heat. Add in beef stock and bring to a light boil. Reduce heat to medium and let simmer rapidly for ten minutes or until saucy, and liquid is reduced by half. Remove from heat and set aside.
In a medium stock pot add 6 cups of cold water, pinch of kosher salt and chunked sweet potatoes. Bring to a boil and let cook for 8 minutes then remove from heat. Mash or pass through a ricer. Add 1 tbsp of curry madras, 1 can of coconut milk and brown sugar. Mix till smooth while hot.
In small oven-safe crocks, add 1½ cups of Jamaican Beef mix, and top with mashed sweet potatoes. Smooth the tops out, place a pad of butter in the center, and sprinkle liberally with smoky honey habanero.
Bake for 20-25 minutes or until filling begins to boil and smoky honey habanero melts and begins to caramelize.
Remove from oven and let cool for 5 minutes.

Seed the habanero unless you want a kicked up more true to form Jamaican Jerk Patty filling. Some like it hot, others do not. Also, if your sauce won't thicken, add a little corn starch slurry to get it to the desired thickness.
