Next time you're at Costco, pick up that beautiful side of salmon and our Korean BBQ blend for an easy dinner that's dang delicious. Chef Christian shows you just how easy this dinner is and adds, "I wouldn't let this marinade sit more than 12 hours with the acid from the vinegar. You also can roll the smoker at 200° F to impart more smoke, but a longer smoking process."

Korean BBQ Smoked Side of Salmon

Ingredients

  • 1 Side of Fresh Salmon from Costco
  • 3 Tbsp Spiceology Korean BBQ Blend from Costco
  • ½ cup Mirin

  • â…“ cup Rice Vinegar

  • ¼ cup Hoisin

Directions

  1. In a medium mixing bowl combine mirin, rice vinegar, hoisin, and Spiceology Korean BBQ seasoning.
  2. Place the salmon in a large casserole dish and pour marinade over top. Flip the salmon over skin side up and wrap in plastic wrap. Refrigerate for 8-12 hours.
  3. Preheat the smoker to 225° F.

  4. Place salmon on the smoker and smoke for 3 1/2 hours or until internal temp reaches 135° F.

  5. Remove from the smoker and rest for 15 minutes.
  6. Serve and enjoy the fruits from your Costco haul!
