½ or Spatchcock chicken

3 tablespoons Spiceology Maui Wowee seasoning

1 tablespoon Soy sauce, as binder

½ cup of your favorite BBQ sauce
- Green onion, optional as garnish
Directions
If you have a whole chicken, take some kitchen shears and cut the back bone out. Cutting through the breast bone if you’re wanting just half, or keep together for a Spatchcock Chicken.
- Brush the soy sauce on your chicken, then season with Spiceology Maui Wowee seasoning, all over and on the back side also. Let dry brine in your fridge, uncovered for at least 4 hours, or overnight.
Heat your grill to medium high heat. Place chicken skin side down and get some grill marks and some char on the skin side, only cook for a few mins on the skin side. Move your chicken to the top rack of your grill and close the lid. Take tour chicken out at about halfway through cooking and glaze with your BBQ sauce.
Once your chicken has fully cooked, remove from grill and cut into pieces. Finished with more Spiceology Maui Wowee seasoning and green onions. Serve with your favorite summer sides.
