Ingredients

6 quarts Baby Bella Mushrooms (sliced)

1/3 cup Spiceology Prime Rib blend

2 Tbsp Garlic (minced)

2 cups White Onion (small dice)

2 cups Flat Leaf Parsley (rough chop)

1/3 cup and 1/2 cup Butter
-
3 Tbsp olive oil
-
1 Rosemary sprig
-
3 Thyme sprigs
-
2 Tbsp Fish Sauce
-
2 tsp Worcestershire
-
1/2 cup Flour
-
4.5 quarts Beef Stock
-
3/4 cup Shredded Mozzarella
-
1 Round Loaf of Sourdough
Directions
In an extra large Dutch oven or wide bottomed sauce pan/rondo, melt 1/2 cup butter and add olive oil. Once shimmering, sauté garlic and onions and 2 Tbsp of Spiceology Prime Rib Rub for 5 minutes.
Add half the sliced mushrooms, fish sauce, Worcestershire, and half the remaining Spiceology Prime Rib blend and sauté on high for 7-10 minutes.
Add the remaining mushrooms, Spiceology Prime Rib blend and parsley and sauté for an additional 5 minutes.
Melt remaining 1/3 cup of butter into mushroom mix and evenly sprinkle in flour. A thick pasty like clumpy roux will form. Continue to cook over high heat and immediately add 1 quart of beef stock and stir in quickly to thicken.
Add remaining beef stock and bring to a boil.
Reduce heat to medium low and simmer for 25 minutes.
Ladle into hollowed out bread bowl and top with shredded mozzarella cheese.
Broil in the oven on hi broil until cheese is lightly browned and bubbly. Remove from the oven and wait 3-5 minutes before devouring.
