Smoked Za'atar Chicken Skewers

Brined and cold-smoked then finished over screaming-hot grill grates these za'atar chicken skewers deliver layers of flavor most weeknight chicken can only dream about. Spiceology Za'atar Blend brings earthy herbal brightness with sesame and sumac that cuts right through the char. Set aside an afternoon and fire up the smoker - these are worth every minute.

Ingredients
- 2 pounds boneless skinless chicken thighs
- ΒΌ cup salt
- ΒΌ cup sugar
- ΒΌ cup Spiceology Zaβatar Blend
- 2 tablespoons olive oil
Directions
- Combine ΒΌ cup Zaβatar, ΒΌ cup salt and ΒΌ cup sugar in a bowl and add Β½ cup HOT water. Whisk until dissolved. Add 3 cups cold water and mix well.
- Pour over chicken thighs and brine for 1 hour.
Prepare the smoker to 180Β° and place brined chicken in smoker. Smoke for 2 hours.
- Remove chicken from smoker and cut into 1β cubes.
- Skewer onto soaked wooden skewers.
Preheat pellet grill to high (450Β°) and coat skewers with olive oil and more Zaβatar. Grill on high for 5-10 minutes or until cooked through to 165 degrees. Serve with fresh drizzle of olive oil, herbs and flake salt.
