Tandoori Glory Corn Chaat

Ingredients

  • 1 cup fresh corn kernels (frozen (and thawed) will work too if necessary)

  • 7 oz can of baby corn

  • ¼ cup popcorn (fresh popped is best!)

  • ½ cup cilantro, chopped

  • 1 small yellow onion, small dice

  • 1 Tbs Spiceology Tandoori Glory

  • lime juice, to taste

  • Mint-cilantro chutney (recipe included)

  • ⅓ cup plain yogurt

  • 1 Tbs lemon juice

  • 1 Tbs cilantro

  • ¼ cup packed mint leaves

  • 1 jalapeño, sliced

  • 1 Tbs ginger, peeled and sliced

  • 1 garlic clove

  • Salt, to taste

  • Honey, to taste

Directions

  1. Heat a sauté pan over med-high heat and add olive oil. Add your onions and cook until translucent (aka sweat them).

  2. Add the fresh corn kernels and baby corn and sauté for 2-3 minutes

  3. Transfer your corn mixture to a mixing bowl and mix with corn nuts, chopped cilantro, and Spiceology Tandoori Glory.

  4. Flavor with lime juice.

  5. Drizzle with mint-cilantro chutney and enjoy!
