Ingredients

2 - 2 1/2 cups of chickpea flour
-
2 Tbsp Spiceology Tandoori Glory seasoning
-
1/2 medium head of cauliflower or 1 cup of riced cauliflower
-
1 medium carrot
-
1 medium russet potato
-
1/2 yellow onion
-
1-2 Serrano chiles
-
3-4 cloves of garlic
-
1 inch knob of ginger
-
1 cup water
-
1/2 cup cilantro
-
Oil for frying
-
Mint, optional garnish
-
Yogurt sauce, optional garnish
Directions
In a large bowl add in your chickpea flour and Spiceology Tandoori Glory seasoning.
With a box grater, grate your potato, onion and carrot, add to your flour.
Finely chop your cauliflower until rice sized.
With a micro planer, grate your ginger and garlic into your flower mix.
Finely chop your Serrano chili and cilantro.
With everything in the bowl, add in your water to make a thick but not doughy batter. If you grab a small handful of batter it should stay together and slowly fall.
Heat your oil to 350°F.
Using a scoop or spoon carefully add your pakora batter into the oil, trying for keep them the same size so they cook evenly. Don’t overcrowd your pakoras.
Cook for 2-3 minutes a side, carefully flipping and cooking for another 2 minutes, they should be golden brown.
Place them on a wire rack to cool. - Enjoy these great appetizers with a fresh mint and yogurt sauce!
