Ingredients

1-2 pie shells (homemade or frozen)

8 Large eggs

2 Tbsp Spiceology Tomatador seasoning
-
2 links of chorizo sausage
-
1 Bell pepper, any color
-
1/2 yellow onion
-
1 cup spinach, chopped
-
2-3 Roma tomatoes
-
1/2 cup milk
-
Brie, as needed
-
Olive oil, as needed
Directions
Prepare your pie shells from homemade or as the boxes instructions.
For cooking the quiche, set your oven to 375° F.
Remove casings from chorizo and break into chucks. Brown your sausage pieces, these don’t have to be fully cooked.
Dice your peppers, onion, tomatoes, and chop your spinach.
Cut your brie into chunks.
Cook your vegetables for 3-4 minutes and add in Spiceology Tomatador seasoning.
Crack your eggs into a large bowl, seasoning with salt and whisk, adding in 1/2 cup of milk.
Add in your cooked vegetables to your egg mixture, carefully pour your egg mixture into your pie shells.
Nestle your chorizo and Brie cheese into your quiches and bake them for 20-22 minutes or until middles are completely set, carefully not to over bake or they will be a bit dry.
Enjoy these quiches for breakfast or brunch and they are great reheated the next day!
