They're small, they're delicious, they're shareable. Spain has the art of bar-hopping with friends down to a science - and these small plates keep you going and help sop up some of that booze. The word tapa means "lid" and comes from the verb tapear, meaning "to cover". Many believe the custom of tapas came about when barkeepers began covering their patrons' drinks with a slice of bread to stop flies and dust from entering the beverage. Chef Christian shares his recipe for these very easy roasted tomatoes that are bursting with Tomatador flavor.

- 2 lbs Plum or Roma tomatoes

2 Tbsp Spiceology Tomatador
- 4 Tbsp sugar
- 1/8 cup chopped garlic
- 1/2 cup rough chopped parsley
- 1/2 cup extra virgin olive oil
Directions
- Cut tomatoes in half and toss with all ingredients in a large mixing bowl.
Preheat oven to 250° F, pour seasoned tomatoes on a baking sheet, and slow roast for four hours moving and flipping once or twice.
- Remove from the oven and let rest.
- Place in mason jar and chill until needed or spread over warm ciabatta or focaccia.
- Serve on the side with Manchego and jamon Iberico. Use in a patatas bravas tomate sauce.
