Ingredients
-
4 Tbsp Spiceology Turkey Rub
-
4 Duck Breasts
-
2 boxes Stovetop Stuffing
-
1/2 cup Butter
-
3 cups Beef stock
-
1/8 cup Spiceology Really Ranch blend
-
1/4 cup Cranberry Relish
-
1/8 cup Flat Leaf Parsley (finely chopped)
Directions
On the stove in a medium saucepan, bring beef stock and butter to a boil. Remove from heat and add stuffing and Really Ranch.
Stir to combine, cover and set aside for ten minutes. Once stuffing is hydrated, transfer from the sauce pan to a parchment lined baking sheet.
Spread evenly and approx. 1/4 thick. Place in oven on top rack for 45 minutes to dehydrate.
Perforate the skin of the duck breasts and sprinkle salt on top. Let rest for 10 minutes before rubbing duck breast with Turkey Rub.
Place in 9x9 casserole dish and fill with neutral oil till just covered. Place in oven on the bottom rack and let cook at 250 F for 3 hours.
Remove stuffing sheet from the oven. With a 3 inch round biscuit punch or cookie cutter, punch stuffing circles. Place on serving platter.
Remove duck from the oven and drain on a cooling rack over a baking sheet for 10 minutes. Thinly slice and place two pieces on each stuffing round.
Garnish with cranberry relish and fresh parsley.
