Bacon Jam
Ingredients:
- 1 pound bacon, diced
- ½ yellow onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- ¼ cup brown sugar
- 1 cup apple cider vinegar
- ¼ cup Chad White’s Flavor Hog Blend
- salt, to taste
Instructions:
- Dice and render bacon in a sauce pot over medium heat until fat is liquid and bacon is crispy, about 5-10 minutes.
- Strain bacon and return some fat to the pot.
- Add onions into the pot and cook until translucent, about 5 minutes. Add garlic and ginger and cook for 1 more minute stirring frequently. Add remaining ingredients and bring to a simmer. Cook until reduced to a lightly thick consistency. The jam will thicken when it cools.
Beer Mustard
Ingredients:
- ½ cup mustard seeds
- ½ cup beer, light
- 1 cup apple cider vinegar
- ¼ cup honey
- 1 tablespoon salt
Instructions:
- Place all ingredients in a pot and bring to a simmer.
- Cook until reduced and mustard seeds are expanded.
- Cool and store for use.
