Breakfast for dinner! (Or lunch or… breakfast.)
Chef Ryan shows you how to whip up this super easy breakfast hash that uses our Tomatador Spanish-inspired Mediterranean blend.
This is a great clean-out-the-fridge recipe and no matter what you throw in – there’s a good chance our Tomatador blend will still go great since it has that tomato powder, slight kick and herby flavor notes.
Tomatador Breakfast Hash
- Prep Time: 10 minutes
- Cook Time: 10 minutes
- Total Time: 20 minutes
- Yield: 1–2 servings 1x
Ingredients
- 1 lbs roasted potatoes
- Cooked bacon, breakfast sausage or Chorizo
- 1/2 medium yellow onion
- 1 red bell pepper
- 1 green bell pepper
- 2–3 Tbsp Spiceology Tomatador seasoning
- 1/4 cup feta or cheese of your liking
- 2–3 eggs
- Olive oil, as needed
Instructions
- Heat your oven to 375°F.
- Dice your bell peppers and onion to a medium dice. Toss with olive oil and 2 Tbsp of Spiceology Tomatador seasoning. Sauté over medium heat for 3-4 minutes or until almost cooked through.
- This breakfast hash comes together super quickly if you are using leftover roasted potatoes and either breakfast sausage, bacon or chorizo (which I used).
- Mix your pepper and onion mix with your potatoes and meat of choice (also great without meat!) Make 2-3 small indents in your mix and add in your eggs so they don’t spill over everywhere. Sprinkle with more Spiceology Tomatador and bake your breakfast hash for 10-12 minutes at 350 F, until eggs are cooked to your liking and everything is warmed through.
- Finish your hash with feta or your cheese of your liking, and enjoy this super easy and hearty breakfast.
